I bring to you a sweet and crunchy salad inspired by a delightful friend of mine. I’m all for simple recipes, so this is an excellent addition.
Required equipment for this recipe:
- Kitchen knife
- Cutting board
- Large salad bowl
- Utensils to mix ingredients
- Apron (optional for handling pomegranates without the risk of staining your clothes)
- 1 medium head sweetheart cabbage finely chopped
- 1-2 pomegranates seeds only
- 1-2 apples chopped
- 100 grams fava beans
- 1/2 red onion chopped
- 3 tablespoons coconut oil
- natural salt to taste

Get ingredients ready for preparation and use.

In your salad bowl, add the chopped sweetheart cabbage, onion and pomegranate seeds.

Take the fava beans out of their pods and add to the salad bowl. (I'm including an image to show what they look like.)

Add chopped apples, pour coconut oil over the top, add salt to taste and mix ingredients.

Your salad is ready for serving!
As always, try as best you can to procure and use organic ingredients. Make sure to rinse and clean your produce properly before use.
Use cold-pressed, organic, non-refined and unheated oils only. (But it's not the end of the world if you use refined coconut oil.)
