Where soups are concerned, sweet potatoes can easily be used to create a creamy consistency in addition to yielding a delicate and sweet taste. And that’s exactly what you’ll get with this sweet potato & celery soup flavored with thyme and cumin. Enjoy!
Required equipment for this recipe:
- High speed blender
- Kitchen knife
- Cutting board
- Soup bowl
- Small cooking pot
- Large cooking pot
- 1 large sweet potato peeled and cut into smaller cubes
- 2 stalks celery cut into smaller pieces
- 1 shallot peeled and sliced
- 2 teaspoons dry thyme leaves
- ½ teaspoon cumin powder
- 1 teaspoon natural salt
- 7 cups water

Get ingredients ready for preparation and use.

In a large pot, pour in 5 cups of water and add celery chunks. Bring to a boil and allow the celery to boil for 5 minutes (lid covered). While the celery cooks, prepare any other ingredients.

At the 5-minute mark, add sweet potato chunks and continue boiling (lid covered) until the sweet potato chunks have become tender (should take roughly 5-7 minutes).

Just before the celery and sweet potato is done, heat 2 cups of water in a smaller pot.

Once the celery and sweet potato is ready, drain out any water from the pot and add contents to your blender. Add in shallot, thyme leaves, cumin powder, salt, and pour in heated water. Blend until desired consistency is reached. Taste test and flavor to your liking.

Sprinkle some additional thyme leaves on top, and your soup is ready for serving!
