Baby Pak Choy, Grape Tomato & Wild Rice Dish

Ingredients

  • 200 grams baby pak choy (remove leaves) chopped
  • 3/4 cup wild rice
  • 1 large avocado cubed
  • 10 grape tomatoes sliced
  • 1 small Italian sweet pepper chopped
  • 1 shallot chopped
  • teaspoons dry basil herb
  • 1 tablespoon coconut oil
  • natural salt to taste

Instructions

  1. Get ingredients ready for preparation and use.

  2. Set water to boil and cook wild rice according to directions.

  3. In a salad bowl, mix together the chopped baby pak choy, Italian sweet pepper, shallot, sliced grape tomatoes, dry basil leaves, avocado, and coconut oil.

  4. When the wild rice has finished, fill one half of your serving plate with the rice, and the other half with salad. Optionally squeeze on some lemon juice.

  5. Tada! Well done; your dish is ready for serving.
