In a salad bowl, mix together the chopped baby pak choy, Italian sweet pepper, shallot, sliced grape tomatoes, dry basil leaves, avocado, and coconut oil.
When the wild rice has finished, fill one half of your serving plate with the rice, and the other half with salad. Optionally squeeze on some lemon juice.
